place everything but the coconut in a food processor and blend until it becomes a dough. Start with minimum amount of dates and add more if it is not sticking together.
form dough into balls of any size.
add shredded coconut to a shallow bowl or plate and roll each ball in the coconut.

- 12-18 medjool dates (depending on size)
- 1/2 cup grated carrots
- 1 tsp vanilla
- 1 tbsp maple syrup
- 1 tsp cinnamon
- shredded coconut
