Creamy Lemon Pasta

Instructions

Step 1:

Boil your pasta as directed on packaging. Reserve 1 cup of pasta water.

Step 2:

While pasta cooks, in a blender add the cashews and milk. Blend on high for one minute or until the it becomes silky smooth. Set aside.

Step 3:

In a pan over medium heat add the oil and minced garlic. Cook for about a minute, do not overcook or burn the garlic. Add the vegetable broth or wine. Cook for a couple minutes.

Step 4:

Lower the heat and add the cashew mixture and lemon juice to the pan. Stir until evenly incorporated. Cook over medium-low heat until it thickens slightly.

Step 5:

Once thickened to your desire consistency, add the pasta to the sauce along with the parmesan cheese. Toss together. If sauce thickens use the reserved pasta water to thin out until you reach your desired consistency.

Step 6:

Top with the bread crumb mixture, more lemon zest and parmesan cheese.

Enjoy!

Step 7:

For Toasted Bread Crumbs: In a pan over medium heat add all the ingredients. Cook until the bread crumbs have browned or 5-7 minutes. Don't let cook too long or the crumbs will burns.

Step 8:

Let cool until ready to top the posta.

Step 9:

Tip: If in a pinch and don't have soaked cashews, fear not! Simply boil the cashews in water for 5 minutes, turn off the burner and let rest in the hot water another 5 minutes. Drain them and now you have soaked cashews! I love unsweetened almond milk in this recipe. Any unsweetened milk will work though. Sweetened milk will make the sauce taste odd.

For Pasta & Sauce

1 Cup Raw Cashews, Soaked

2 Cloves Garlic, Minced

2 Tbsp Olive Oil

1/4 Cup White Wine or Vegetable Broth

1/2 Cup Plant-Based Milk, Unsweetened

1/4 - 1/2 Cup Vegan Parmesan Cheese or Nutritional Yeast

Salt And Pepper To Taste

1/2 Lemon (Juiced And Zested)

1 - 8 oz Package Pasta of Choice

 

For Toasted Peppered Breadcrumbs

2 Tbsp Olive Oil

1/4 Cup Bread Crumbs

1 Tsp Ground Pepper

  1. This is so good it’s criminal. I like black pepper a lot so I used 1.5 tsp. This was creamy, crunchy, lemony, and so delicious. One of our absolute favorites and a cinch to make.
