Teriyaki Ground “Beef”

Instructions

Step 1:

Start by pressing your tofu for about 30 minutes to eliminate as much water as possible. If you don't have time to press, wrap is a paper towel and gently press to release as much water from the tofu.

Step 2:

Preheat oven to 400º. Break up the tofu into small bits, I prefer small ground beef like bits, but feel free to leave in slightly larger chunks.

Step 3:

Add all the tofu ingredients to the crumbles and toss to coat.

Step 4:

On a large sheet pan add about 1-2 Tbsp of olive oil and toss the crumbles onto it. I don't tend to use parchment here, as it helps crisp up the tofu and lead to a better texture. Transfer to sheet pan.

Step 5:

Cook for about 20-25 minutes and toss halfway through. I tend to cook 30-35 for darker golden brown tofu. The tofu should be dark golden brown, but not burnt, keep an eye on it so the tofu doesn't burn.

Step 6:

Make the teriyaki sauce by adding 1/4 cup soy sauce, ginger, garlic, brown sugar, and 1 tablespoon cornstarch mixed with the water, all into a saucepan over medium heat.

Step 7:

Stirring occasionally, bring to a low simmer until the mixture thickens. When reached your desired consistency (about 5 minutes.) Remove from heat and set aside for serving.

Step 8:

Remove the tofu pieces from oven and let cool. Feel free to serve immediately with the teriyaki BBQ sauce, but it is best in texture the next day. Either way, you can't beat this delicious eat!

Tofu

1 Block of Firm or Extra Firm Tofu (about 14 oz)

1 Tbsp Soy Sauce

1 Tbsp Olive Oil (Plus more for cooking)

1 tsp Garlic Powder

1 Tbsp Brown Sugar

2 tsp Maple Syrup

2 tsp Rice Vinegar

 

Teriyaki Sauce

1/4 Cup Soy Sauce or Tamari

1/4 Cup Brown Sugar

2 Cloves Garlic, Minced

1 Tsp Ginger, or 2 Tsps Fresh Ginger, Minced

1/4 Cup Water

1 Tbsp Cornstarch

1 tsp Sesame Oil

1/4 Cup BBQ Sauce (optional)
