Easy AND delicious!
Make your flax egg or egg replacement and preheat oven to 350º
In a double broiler or microwave, melt half of the chocolate (5 oz) until it is smooth. If using microwave, heat in 20 second increments. Set aside for later use.
In a mixing bowl combine the sugars and oil. Stir vigorously until evenly mixed.
Add the egg replacement (if using flax egg use 2 tbsp flax mill + 4 tbsp water) and vanilla. Stir again until glossy and combined.
Stir in the melted chocolate to this mixture.
Mix in the cocoa powder and baking powder. Mix well, ensuring to scrape the sides of the bowl in case pockets of powder form.
Next, sift in the flour and salt. Lightly fold together until it comes together. Some visible flour is okay.
Finally, add the remaining chocolate chips. Again, lightly stir until the chocolate is even throughout the mix.
Bake for 30-35 minutes in the oven. Brownies should still be fudgy, but will set when they cool.
After allowing to cool, slice, serve and enjoy!

1 tsp Baking Powder
1/4 tsp Salt
10 oz Chocolate Chips/Chunks
