Protein Snowball Bites

For some reason I don’t tend to make many energy or protein bites. Maybe it’s because I know I’ll eat them all. But I decided to change that after wanting to do a take on the center of peanut butter cup without the chocolate. Thus these little bite do just that and are addicting to say the least. I love the simplicity of making protein bites and after this recipe I will indeed be making many MANY more!

 

 

What You’ll Need

Let’s gather our ammunition for these delightful bites:

  • Oat flour
  • Protein powder (I swear by Sprout Living protein – it’s the cleanest non-whey protein!)
  • Almond flour
  • Any nut butter (go wild with your favorite!)
  • Honey or maple syrup
  • Vanilla extract
  • Shredded coconut (for that satisfying coating)

 

Bringing it All Together

Now, onto the fun part – making these tasty nugs!

First off, combine the dry ingredients: oat flour, protein powder, and almond flour. Get ’em all cozy in a mixing bowl and make sure they’re well acquainted.

Next up, time to add the wet squad – nut butter, honey or maple syrup, and vanilla extract. Mix, mix, mix until you’ve got a doughy goodness going on. If it feels a bit dry, don’t sweat it! Just toss in a bit more nut butter or sweetener to bring it together.

Roll up your sleeves and roll out bite-sized balls with the mixture using your hands. It’s therapeutic, I promise!

Coconut time! Pour that shredded goodness onto a plate and give each ball a proper roll until it’s decked out in coconut armor. If it’s not sticking, a touch more sweetener can do the trick to make it all cozy.

Line ’em up on a baking sheet, pop ’em in the fridge for around 30 minutes – that’s the chill-out session for these bites to set their flavors and shapes.

Now, how do you know when these snowball bites are ready to steal the show? Here are my secret tips:

  1. Consistency is Key: The dough should hold its shape when you roll it. If it feels crumbly, add a tad more nut butter or sweetener to bind it better.
  2. The Perfect Coat: When rolling in coconut, gently press to ensure it sticks without being too heavy-handed.
  3. Chill for the Thrill: The 30-minute fridge session is crucial for them to set. This way, they hold their shape and deliver that satisfying bite.
  4. Storage Savvy: Store these beauties in an airtight container in the fridge for longer shelf life. But trust me, they won’t last long – they’re too good!

Ingredients

  • 1 1/2 cups oat flour
  • 1/2 cup protein powder
  • 1/2 cup almond flour
  • 1/2 cup any nut butter

  • Chill: Place the coated balls on a baking sheet lined with parchment paper and chill them in the refrigerator for approximately 30 minutes to set.
