  • 4 chicken breast boneless and skinless
  • 2 cups protein cheese crackers I use Quest
  • 1 cup parmesan cheese grated
  • 2 eggs
  • 1 tsp garlic powder
  • 1 tsp paprika
  • salt and pepper to taste
  • olive oil or oil spray for cooking

Instructions

  • Preheat your air fryer to 375°F (190°C) for 5 minutes.
  • In a shallow bowl, mix crushed protein cheese crackers, grated Parmesan cheese, garlic powder, paprika, salt, and pepper.
  • In another bowl, beat the eggs until well combined.
  • Pat dry the chicken breasts with paper towels. Cut into tender sized pieces. Season both sides with a pinch of salt and pepper.
  • Dip each chicken breast into the beaten eggs, coating both sides thoroughly.
  • Press the egg-coated chicken breasts into the cheese and cracker mixture, ensuring they're evenly coated on both sides.
  • Lightly spray the air fryer basket with cooking spray or brush with olive oil to prevent sticking.
  • Place the coated chicken breasts in the air fryer basket, making sure they're not overcrowded. You may need to cook them in batches. Spray the tops of the chicken breasts lightly with cooking spray or olive oil to help them crisp up.
  • Air fry the chicken at 375°F (190°C) for 10-12 minutes, flipping halfway through the cooking time. Cook until the chicken reaches an internal temperature of 165°F (74°C) and the coating is golden brown and crispy.
  • Once done, remove the chicken from the air fryer and let it rest for a couple of minutes before serving.
