Garlic Parmesan Chicken Bites

Ingredients

  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons butter melted
  • 3 cloves garlic minced
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup chicken stock
  • Fresh parsley chopped (for garnish)

Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  • In a mixing bowl, combine butter, minced garlic, grated Parmesan cheese, paprika, salt, and pepper.
  • Add the chicken pieces to the bowl and toss until they are evenly coated with the mixture.
  • Heat a non-stick skillet over medium-high heat. Add the chicken pieces and cook for 2 minutes on each side until they are lightly browned.
  • Transfer the browned chicken bites to the prepared baking sheet.
  • Pour the chicken stock into the skillet used to cook the chicken. Scrape up any browned bits from the bottom of the pan and let the stock simmer for a minute or two to reduce slightly.
  • Drizzle the reduced chicken stock over the chicken bites on the baking sheet.
  • Place the baking sheet in the preheated oven and bake for 10-12 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Notes

If using an oven safe skillet, no need to use a sheet pan. Simply add the chicken back into the skillet after the broth as reduced and add the skillet into the oven instead.
